What you’ll do
Many grains are called “Super Foods” for good reason: they’re packed with nutrition. Chef/Culinary Instructor John Bela will inspire you to introduce ancient grains to your menu with a Caprese Salad of smoked buffalo mozzarella and polenta with roasted tomatoes and basil, Smoked Ham and Barley Soup, and Cumin-Roasted Cauliflower with freekeh, shredded chicken, caramelized onions, almonds, raisins and mint. Dessert will be Chocolate Quinoa Cake with whipped cream and an oatmeal granola.
