You arrive home from work with a limited amount of time to get a delicious, nutritious dinner on the table. These recipes that Vegetarian Chef/Cookbook Author Nettie Cronish will show you can be completed quickly and offer a lot of choice: Pita Pizzas with fresh herbs, tomatoes, zucchini and parmesan; Tofu Minestrone with pinto beans, penne pasta and celery; Orzo with leeks, roasted red peppers and fresh mint, and Fruit Couscous with pears, strawberries, oranges and ground ginger and cinnamon.
