Aztec Artichoke Salad

Serves 6 to 8


1 pkg (250g) halloumi, sliced

1 pkg (142g) Longo’s Baby Kale or Arugula

1 pkg (450g) Longo's Meal Kit Fully Cooked Aztec Blend

1 jar (580mL) Longo’s Grilled Marinated Artichokes, drained well

1 pint Longo’s Grape Tomatoes, halved

1 cup chopped cucumber

1 tub (227g) Longo’s Artichoke and Asiago Dip

1/4 cup Longo’s Extra Virgin Olive Oil

3 tbsp Longo’s Cider Vinegar

1/2 tsp each salt and pepper


  • Spray halloumi with cooking spray and place on preheated grill over medium heat until grill marked. Let cool and cut into cubes.
  • Spread kale onto platter and top with grains, artichokes, tomatoes, cucumber and halloumi cubes.
  • Whisk together artichoke dip, oil, vinegar, salt and pepper. Serve alongside and spoon onto serving as desired.

A dash of advice

Make this salad even faster by substituting 1 cup cubed feta cheese for the halloumi.
