Cactus Pear Christmas Mojito

1 cactus pear

10 leaves fresh Longo’s Mint

1/4 tsp granulated sugar


1 tbsp fresh lime juice

1/4 cup cranberry, blueberry, pomegranate juice mix

3 cranberries


  • Cut peel off cactus pear and cut into chunks. Place in small food processor and purée until smooth. Press through a fine strainer to remove seeds, set juice aside.
  • Place fresh mint and sugar into rock glass and muddle (mash) until mint is fragrant. Add ice to glass along with cactus pear juice, lime juice and cranberry juice mix; stir to combine.
  • Skewer cranberries onto a small skewer or toothpick to garnish drink and enjoy.
  • Tip
  • To create a spiked variation, add in 2 tbsp 
vodka, gin, rum or tequila.

A dash of advice

Cactus pairs, a.k.a. “prickly pears,” are wonderfully sweet but are, well, prickly! So handle them with kitchen gloves (or simply stick one with a fork to hold it steady). To peel, slice off both ends, then make one vertical cut down the fruit. Finally, peel off the thick skin. Inside you’ll find the gorgeous flesh, full of tiny edible seeds.
