Chocolate Almond Cherry Mounds
Yield 24 pieces
1 1/2 cups corn flakes cereal
1 cup Longo’s Organic Dried Cherries or Cranberries
1/2 cup Longo’s Slivered Almonds, toasted
1/3 cup Longo’s Golden Raisins
1/4 cup Longo’s Shelled Pistachios
8 oz semisweet chocolate, chopped and melted
2 oz white chocolate, chopped and melted
- •Mix cereal, cherries, almonds, raisins and pistachios together in large bowl. Stir in melted semisweet chocolate until nuts and dried fruit are completely coated in chocolate.
- •Using heaping tablespoonfuls, drop mounds of the mixture onto parchment paper-lined baking sheet. Chill for about 1 hour or until solid.
- •With the tines of a fork, drizzle white chocolate evenly over each chilled mound.
- •Make-ahead - Mounds can be kept in the refrigerator for up to 7 days.
