Fiesta Grilled Potato Packets

1 pkg (500g) Longo’s Mini Red & White Rosemary Potatoes, cubed

1/2 cup diced red pepper

1/2 cup corn (or 1 cooked cob, shucked)

2 tbsp Longo’s 100% Pure Canola Oil

1 tsp Longo’s Chili Powder

1/2 tsp each Longo’s Ground Cumin and Longo’s Onion Powder

1/4 tsp each salt and pepper

1/2 cup grated old cheddar cheese

1/4 cup Longo’s Sour Cream

2 green onions, chopped


  • Combine potatoes, red peppers and corn in bowl. Blend oil with chili powder, cumin, onion powder, salt and pepper; toss with potato mixture until evenly coated.
  • Spread potato mixture out on large sheet of heavy-duty foil. Bring in sides and fold into a secure, flat packet.
  • Place packet on preheated grill set over medium heat. Grill, turning often, for about 15 minutes. Remove to plate. Guarding hands, cut open packet and fold back sides. Top with cheese, sour cream and green onions to garnish. (Alternately, transfer packet contents to a bowl and garnish.)

A dash of advice

This recipe doubles easily but be sure to make 2 smaller, flat packets rather than 1 large one for ease of flipping and better browning of the potatoes.
