Grilled Naan Quesadillas
2 cobs of corn, husked
1 tbsp Longo’s Ancho Chili Smoked Grilling Oil
227-g tub Longo’s Spicy Black Bean Dip
1/4 cup Longo’s Medium Salsa
2 tbsp chopped fresh cilantro
4 Longo’s Stone Baked Tandoori Style Naan, Original or Garlic
1 cup shredded old cheddar cheese
- •Brush corn with grilling oil and grill over medium-high heat, turning occasionally, for about 8 minutes or until golden. Let cool slightly and cut kernels off cob.
- •Stir together dip, salsa and cilantro. Spread evenly over 2 of the naan pieces. Sprinkle with corn and cheese. Top with remaining naan.
- •Place on greased preheated grill over medium heat, turning once, for about 5 minutes or until crisp and cheese melts. Cut each into 6 wedges to serve.
