Lemony Couscous with Carrots
Serves 8 to 12
1 carton (946 mL) Longo’s No Salt Added Chicken Broth
2 1/3 cups Longo’s Pearl Couscous
2 cups matchstick carrots
1/4 cup chopped fresh parsley
3 tbsp Longo’s Salted Butter
2 tbsp lemon juice
1 tbsp finely grated lemon zest
1/2 tsp salt
1/4 tsp pepper
- •Bring broth to a boil in large pot. Stir in couscous. Cover and cook on medium for 12 minutes. Reduce temperature to medium-low.
- •Stir in carrots; simmer, covered, for 6 to 8 minutes or just until fluids are absorbed and carrots are tender. Remove from heat.
- •Stir in parsley, butter, lemon juice and zest, salt and pepper.
- •Replace matchstick carrots with 2 cups chopped asparagus.
