Pasta Lemon Berry Salad
500-g bag Longo’s Signature Artisan Creste di Gallo Pasta
3/4 cup plain Balkan-style yogurt
3 tbsp Longo’s Signature Organic Sicilian Extra Virgin Olive Oil with Lemon
1/2 tsp grated lemon zest
2 tbsp lemon juice
1 tsp granulated sugar
1/2 tsp salt
1/4 cup chopped fresh Longo’s Basil
2 tbsp chopped fresh parsley or fresh Longo’s Mint
1 pint (6 oz/170 g) fresh blueberries
1/4 cup Longo’s Sliced Almonds, toasted
- •Boil pasta in a pot of boiling salted water for about 8 minutes or until al dente. Drain and rinse under cold water; drain well.
- •Whisk together yogurt, oil, lemon zest, lemon juice, sugar and salt in large bowl. Add pasta and stir to coat. Stir in basil and parsley.
- •Add blueberries and stir through, then sprinkle with almonds to serve.
- •For a bigger hit of lemon flavour, add another 1/4 tsp of lemon zest to the dressing.
