Persimmon Ginger Spritzer

1 ripe Fuyu persimmon, stem removed


2 tbsp fresh lime juice

1/2 tsp grated fresh ginger

Longo’s Honey

Strip of lime zest

Longo’s Carbonated Water


  • Peel and chop persimmon, place in small food processor and purée until very smooth.
  • Place ice into rock glass and add persimmon purée, lime juice and ginger. Stir gently to combine.
  • Add honey, to taste. Add lime zest and then pour enough carbonated water to top off drink.
  • Tip
  • To create a spiked variation, add in 2 tbsp vodka or gin.

A dash of advice

A perfectly ripe persimmon should be deeply coloured, glossy and heavier than it looks. Give it a gentle squeeze, and if it gives slightly under pressure, it’s ready to enjoy.
