Quick Glazed Snap Peas with Lemon & Mint

Serves 4 to 6


1 tbsp Longo’s Canola Oil

3 cups stringless snap peas

1/2 cup sliced red onion

2 tbsp lemon juice

1 tbsp Longo’s Honey

1/4 each salt and pepper

2 tbsp chopped Longo’s Fresh Mint


  • Heat oil in large, nonstick skillet set over medium heat. Add snap peas and onion and stir-fry for 5 minutes.
  • Whisk lemon juice with honey, salt and pepper. Pour into skillet and toss until peas are nicely glazed. Transfer to serving bowl. Sprinkle with mint to serve.

A dash of advice

Substitute fresh squeezed orange juice for lemon for a sweeter toss.
