Smoked Salmon Breakfast Wrap
4 Longo’s Enriched Coop Eggs
1/4 tsp each salt and pepper
1 tbsp Longo’s Extra Virgin Olive Oil
2 Dempster’s Ancient Grains 10-inch Tortillas
2 tbsp herb and garlic cream cheese
4 slices Longo’s Atlantic Smoked Salmon (about 2oz)
1/2 cup Longo’s Baby Arugula
1/4 cup thinly sliced red onion (optional)
1 tsp Longo’s Capers
- •Whisk together eggs, salt and pepper; set aside.
- •Heat oil in an 8-inch nonstick skillet over medium heat. Add egg mixture and cook, stirring gently, for about 5 minutes or until soft curds start to form.
- •Place tortillas on work surface. Spread each with cream cheese along centre, leaving border on both ends. Top evenly with scrambled eggs, smoked salmon, arugula, onion, if using, and capers. Fold up bottom of tortillas over filling, then fold in sides and roll up tightly to serve.
