1/2 375-g pkg Longo’s Cauliflower Florets

5 clementines, divided

1/4 cup Longo’s Extra Virgin Olive Oil

2 tbsp fresh lemon juice

1/2 tsp each salt and pepper

1 tub (142 g) Longo’s Organic Fancy Mixed Greens

1/2 cup pomegranate arils


  • Slice cauliflower florets thinly. Zest and juice 1 clementine; peel and segment remaining clementines.
  • Combine cauliflower and segmented clementines in salad bowl.
  • Whisk together clementine zest and juice, oil, lemon juice, salt and pepper. Toss with cauliflower and oranges. (Make-ahead - Cover and refrigerate for up to 1 day.)
  • Toss in mixed greens and pomegranate arils just before serving.

A dash of advice

For a savoury contrast, add thinly sliced red onions to the salad. Sprinkle a few petals of Bella lodi cheese over top of the salad before serving for an extra hit of flavour.
