The relationship between nutrition and mental well-being has been widely studied over the past two decades. Emerging research continues to show that what we eat can influence important aspects of brain health, including energy levels, mood stability, focus, and overall resilience. In this engaging demonstration class, Chef Patricia Borsato revisits the concept that first inspired her earlier work with Mood Food: exploring how everyday ingredients can support both physical and mental well-being. Drawing from Mediterranean cooking traditions and her background in nutrition and chemistry, Patricia prepares a selection of dishes that highlight foods rich in healthy fats, minerals, and plant compounds known to support brain health. Guests enjoy tastings while learning how thoughtful ingredient choices and simple cooking techniques can help create meals that nourish both body and mind. The menu includes: roasted zucchini with Brazil nut pesto; creamy risotto with mackerel, apple, fennel, and lemon; and dark chocolate avocado mousse with toasted pumpkin seeds and raspberries.
