Caviar Basics: Everything you need to rule the caviar world, one bite at a time

What is caviar?

To be considered true caviar, the roe must come from sturgeon of the Acipenseridae family. As all caviar lovers know, only sturgeon eggs qualify as real caviar! Non-sturgeon fish eggs are just considered Roe but commonly called caviar in North America.

How do I eat & serve caviar?

Caviar is a delicacy that can be eaten alone, as a side or appetizer and a great addition to any dish. The most popular accompaniments for caviar are French Cocktail Blinis, unsalted butter and Crème Fraiche. If you are serving the tin of caviar at room temperature for more than one hour, make sure to keep the tin on crushed ice. Use Mother of Pearl utensils when handling sturgeon caviar, stainless steel silverware can alter the taste of caviar!

Is caviar nutritious or healthy?

Absolutely, caviar has numerous health benefits. One serving is full of protein, calcium, iron, magnesium, phosphorus, selenium, and vitamins A, B2, B6, B12, B44, C, and D. Caviar is also known to contain a variety of essential amino acids such as lysine, arginine, isoleucine, methionine and histidine.

How should I store caviar?

A sealed caviar tin will stay fresh for up to 4-6 weeks in a home refrigerator and 3-5 months in a commercial refrigerator.  Once opened, the caviar should be enjoyed and consumed within 48 hours.

Sturgeon caviar is not recommended to be frozen. If you haven’t yet opened the tin of caviar and it’s coming close to expiring, you can freeze it. Keep in mind that the caviar may lose its texture, egg size, and flavor profile upon thawing
