BACON-STUFFED BEEF ROAST

Ingredients
1 pkg (375g) Longo’s Applewood Side Bacon, chopped
1 large shallot, diced
4 large cloves garlic, minced
1 red bell pepper, diced
3 Longo’s Curato Mild Anchovy Fillets in Olive Oil, minced
1/3 cup Longo’s Italian Seasoned Bread Crumbs
1/4 cup chopped fresh parsley
1/4 cup Longo’s Golden Raisins
1 Longo’s Certified Angus Beef Prime Rib Premium Oven Roast, about 2kg
2 tbsp Longo’s BBQ Rub
Directions
Cook bacon, shallot and garlic in large skillet over medium-high heat for about 5 minutes or until starting to brown. Drain all but 2 tbsp of fat in skillet and stir in red pepper and anchovies. Cook, stirring, for 4 minutes or until golden. Stir in bread crumbs, parsley and raisins. Let cool slightly.
Untie rib roast and lift meat away from bones. Pack stuffing onto bones and top with meat portion to line up again. Tie roast again and season outside all over with BBQ rub.
Place, bone-side down, on rack in roasting pan. Roast in preheated 450°F oven for 15 minutes. Reduce heat to 325°F for 1 1/2 to 2 hours or until internal temperature registers 135°F for medium rare (or continue to cook to desired doneness). Tent with foil for 10 minutes. Remove string and place meaty portion of roast onto cutting board. Carve meat and top with spoonful of bacon stuffing to serve.
