Ingredients
Longo’s Avocado Oil Cooking Spray 2 pkg (340g each)
Longo’s Bacon Wrapped Scallops
1/2 cup Longo’s Sweet & Spicy Grilling Sauce
Green Goddess Mayo:
1/2 avocado
1/4 cup mayonnaise
1/4 cup chopped assorted fresh herbs such as parsley or Longo's Organic Chives, Dill or Cilantro
4 tsp fresh lime or lemon juice (or to taste)
1 tbsp Longo’s Capers, drained
Directions
Green Goddess Mayo: Combine avocado, mayonnaise, herbs, lime juice, capers, salt and pepper in blender or small food processor; blend until smooth. Adjust seasonings to taste.
Line grill with aluminum foil and lightly coat with avocado oil spray.
Add frozen scallops to foil-lined greased preheated grill set over medium heat. Grill for 18 to 20 minutes, brushing liberally with grilling sauce during the last few minutes of grilling.
Salad variation: Serve the scallops as an entrée salad alongside wedges of iceberg lettuce garnished with halved cherry tomatoes, chopped cucumber and diced red onion.
