BEEF SWEET POTATO STIR-FRY

Ingredients

375g beef stir-fry strips or striploin steak cut into thin strips |
1/2 cup Longo’s Korean Grilling Sauce or Thai Chili Sauce, divided |
1 bag (454g) baby bok choy, halved |
1 pkg (340g) sweet potato or butternut squash spiral noodles |
1 large red pepper, thinly sliced |

DIRECTIONS
Combine beef with half the grilling sauce and 1/4 tsp each salt and pepper; set aside.
Bring 1 cup of water to a simmer in large skillet and add bok choy. Cover and steam for 2 minutes. Drain well and wipe out skillet. Return to medium-high heat and add 2 tbsp Longo’s 100% Pure Canola Oil.
Stir-fry sweet potato noodles, red pepper and bok choy
with remaining grilling sauce and 1/4 tsp each salt and pepper for 4 minutes or until tender. Divide among plates.
Return skillet to medium-high heat and stir-fry beef for 2 minutes or until hint of pink remains. Top plates with beef to serve.
