BROCCOLI CHEDDAR RICE CASSEROLE

Ingredients

1 pkg (450g) Longo’s White Sticky Calrose Rice2 cups Longo’s Essentials Frozen Mixed Vegetables2 cups shredded marble cheddar cheese, divided3 tbsp chopped fresh Longo’s Pesto Basil1/4 tsp each salt and pepper1 tub (700mL) Longo’s Broccoli & Cheddar Cheese Soup4 large Longo’s Enriched Coop Eggs

Directions

Stir together rice, vegetables, 1 cup of the cheese, basil, salt and pepper.

Spread rice mixture evenly into greased 13 x 9-inch casserole dish; set aside.

Whisk together soup and eggs until blended. Pour over rice and spread evenly overtop. Sprinkle with remaining 1 cup cheese.

Bake in preheated 375°F oven for about 40 minutes or until golden brown and set. Let cool slightly before cutting to serve.

Tip: Substitute parsley for the basil, if desired.
