BURRITO DELICATA SQUASH BOATS

Pierce squash a few times all over with small paring knife. Heat in microwave for 3 minutes. Remove to cutting board, cut in half and scoop out seeds.
Drizzle inside of squash with oil and sprinkle all over with salt, chili powder and cumin.
Place squash, cut-side down, onto baking sheet lined with parchment paper. Roast in preheated 400°F oven for about 30 minutes or until tender.
Meanwhile, in large bowl, stir together rice, beans, salsa, half of the cheese and 3 tbsp of the cilantro.
Turn squash over and pack with rice mixture. Sprinkle remaining cheese overtop and return to oven for about 10 minutes until cheese is melted and filling is heated through. Sprinkle with remaining cilantro to serve.
