CHARRED PEPPER PUTTANESCA MEDLEY

Ingredients

INGREDIENTS

1 1/2lb mini Ontario peppers

3 tbsp Longo’s Extra Virgin Olive Oil

1 large clove garlic, grated

1 tbsp brine from jar of Longo’s Capers

12 to 16 Longo’s Kalamata Olives,

pitted if desired

2 tbsp drained Longo’s Capers

1/4 tsp each salt and pepper

Chopped fresh parsley

Directions

DIRECTIONS

Grill peppers on preheated greased medium grill, turning often, for 8 to 10 minutes or until charred and tender.

Meanwhile, in large bowl, whisk oil with garlic and brine from capers;  add olives and capers. Once peppers are grilled, add to bowl. Season with salt and pepper; toss to coat. Cover bowl and let stand for at least 10 minutes to develop flavours before serving.

Serve warm or at room temperature sprinkled with parsley to garnish.

A Dash of Advice

Replace mini peppers with 3 large sweet bell peppers, cored, seeded and cut into large chunks.
