CHEDDAR POLENTA WITH SAUSAGE AND GREENS

Ingredients


1 pkg (500g) Longo’s Mild or Hot Raised Without Antibiotics Pork Sausages, casings removed

1 tub (283g) Longo’s Baby Kale or Cooking Greens

2 cloves garlic, minced

1 cup cornmeal

1 cup shredded Longo’s Spiced Colby Cheese

Directions

Heat 1 tbsp Longo’s 100% Pure Canola Oil in large skillet over medium heat. Add sausages and cook, stirring and breaking up sausage meat, for about 5 minutes or until browned well. Stir in kale, garlic and 1/4 tsp each salt and pepper. Cook, stirring, for about 5 minutes or until greens are wilted and tender. Keep warm.


Meanwhile bring 4 cups of water and 2 tsp of salt to a boil. Whisk in cornmeal until starting to thicken. Switch to a wooden spoon and stir polenta for about 10 minutes or until very thick. Stir in cheese until melted.


Spoon polenta into shallow bowls and top with sausage mixture. Sprinkle with more cheese, if desired.


A Dash of Advice

Vegetarian Variation: Substitute veggie sausages or veggie ground round for the pork sausages.
