CHEESY MUSHROOM DIP

Ingredients
1 tbsp Longo’s Mediterranean Extra Virgin Olive Oil
1 small onion, diced
1 cup chopped mushrooms (about 6 large mushrooms)
1 clove garlic, minced
2 pkgs (150g each) herbed cream cheese (such as Boursin)
1 tbsp chopped fresh Longo’s Organic Chives
1 cup shredded Longo’s Mozzarella Cheese
Longo’s Artisan-Made Flatbread or Pita Chips
Directions
Heat oil in non-stick skillet set over medium heat. Add onions; cook, stirring, for 3 minutes. Add mushrooms and garlic; cook, stirring, for about 5 minutes or until lightly browned.
Stir together herbed cheese and chives in bowl. Stir into mushroom mixture. Transfer to 4-cup gratin dish. Sprinkle with mozzarella.
Bake in preheated 425°F oven for 20 to 25 minutes or until golden. Serve with flatbread or pita chips.
