CHICKEN AVOCADO SANDWICHES

Ingredients

1 Longo’s Barbecue Rotisserie Style Chicken (1 kg)

1 pkg (440g) Longo’s Kitchen Steamed Vegetables

1 pkg (227g) Longo’s Avocado Hummus

1/2 cup Longo’s Mayonnaise

1 Longo’s Swiss Twist Boule (450g)

Directions

Remove meat from chicken, discarding bones and skin. Pull or chop into bite-sized pieces and place in large bowl.

Chop veggies and add to bowl with chicken. Stir in hummus, mayonnaise, 1/2 tsp pepper and 1/4 tsp salt until evenly coated.

Cut loaf in half crosswise and pull out some of the inside of the bread, leaving a 1-inch crust edge all around top and bottom; reserve for another use (see A Dash of Advice).

Spoon chicken mixture into bread loaf, packing and mounding slightly. Place top half overtop and press down to close sandwich. Wrap with foil and refrigerate for 15 minutes or up to 1 day.

Cut into wedges and enjoy. Alternatively, place in 400°F oven or grill for about 15 minutes to heat through.

A Dash of Advice

Place reserved bread in food processor and pulse to make fine crumbs. Freeze and use as fresh breadcrumbs in recipes. Substitute 1 pkg (350g) Longo’s Kitchen Grilled Vegetables for  the steamed vegetables.Want individual sandwiches? Use 4 or 6 large round Kaiser buns and remove some of the inside bread to fill.
