Ingredients
12 uncooked frozen Longo’s Chicken Kaftas, thawed
1 pkg (450 g) Longo's Sticky Calrose Rice
1/3 cup Longo’s Sweet & Spicy Grilling Sauce
1 cup Longo’s Seriously Sweet Grape Tomatoes, halved
1 cup diced cucumber
Directions
Lightly spray kaftas with Longo’s Avocado Oil Cooking Spray and place on preheated medium grill. Grill for about 20 minutes, turning occasionally, until golden brown, no longer pink inside and thermometer registers 165°F.
Meanwhile, in large nonstick skillet, heat 2 tbsp Longo’s Essentials 100% Pure Canola Oil over medium-high heat. Sauté rice with 1/4 tsp each salt and pepper for 5 minutes or until starting to brown. Add sauce and stir to coat well.
Divide rice among bowls and add grape tomatoes and cucumber. Top each bowl with 3 kaftas and extra sauce to drizzle overtop, if desired.
