CHORIZO OVEN POTATO BAKE

Ingredients

2lb Longo’s Yellow Flesh Potatoes (about 4 or 5)

1 large red bell pepper, coarsely chopped

1 tsp Longo’s Essentials Garlic Salt

1 pkg (500g) fresh Longo’s Chorizo Pork Sausages

1 pkg (315g) Longo’s Brussels Sprouts with Garlic and Parmesan Cheese

Directions

Cut each potato into 8 wedges and place in large bowl with red pepper. Drizzle with 2 tbsp Longo’s Essentials 100% Canola Oil, garlic salt and 1/2 tsp pepper; toss well to coat.

Spread potato-pepper mixture onto large, rimmed baking sheet lined with parchment paper. Add in sausages. Roast in preheated 400°F oven for about 25 minutes or until potatoes are tender and golden and susages register 165°F.

Meanwhile, warm Brussels sprouts per package directions and serve with sausages and vegetables.
