CLEAN OUT THE FRIDGE BREAKFAST BURRITO

Ingredients

4 Longo’s Breakfast Sausages, casings removed

2 large (10 inch) Longo’s Whole Wheat Flour Tortillas

1 cup leftover scrambled eggs (3 large eggs)

2 slices cooked bacon

1/2 cup Longo’s Mild Salsa

1/4 cup grated cheddar or any random cheese bits

2 tbsp Longo’s Organic Black Beans, rinsed

1 tbsp sliced green onions

1/2 a ripe avocado

Pinch each salt and pepper

Pinch smoked paprika

Longo’s Sour Cream (optional)

Hot Sauce (optional)

Directions

Heat large skillet over medium heat and crumble in pork sausages; cook, stirring to break up meat, until no longer pink. Scrape onto plate lined with paper towels.

Lay tortillas onto flat work surface and divide eggs in centre of each. Top each with bacon, cooked sausage and salsa. Add cheese, beans, onions and avocado overtop. Sprinkle with salt, pepper and smoked paprika. Fold in sides and end of each tortilla and roll up. Wrap each in foil and place on baking sheet lined with Longo’s Parchment Paper. (Make-ahead: Wrap the burritos and refrigerate for up to 2 days. Add about 5 minutes to the cooking time when warming up.) Bake in preheated 425°F oven for about 10 minutes or until cheese is melted.

Serve with sour cream and hot sauce, if using.

A Dash of Advice

Sustainable Tip: Make your own sour cream! Just whisk in some lemon or lime juice to expired 35% cream and let stand for about 30 minutes to thicken before using.
