EASIEST SUMMER STRAWBERRY PIE

Ingredients
1 ready to use graham cracker pie crust (170g)
1 pkg (475g) Longo’s Mascarpone Cheese, room temperature
1/4 cup granulated sugar
1 tbsp 35% whipping cream
1 tsp grated orange zest
1 1/2lb fresh Ontario strawberries, hulled
2oz semisweet chocolate, melted
Directions
Bake pie crust according to package directions; let cool completely.
Using a stand mixer or handheld beaters, beat mascarpone, sugar, cream and orange zest in bowl until smooth and fluffy.
Spread gently into prepared pie crust. Place one-third of the strawberries into bowl. Using a potato masher or fork, mash until puréed. Dollop on top of mascarpone mixture. Using the tip of a knife, swirl strawberries through the cheese.
Slice remaining strawberries and arrange in concentric circles on top of filling. Drizzle chocolate overtop.
(Make-ahead: Pie can be covered loosely with plastic wrap and refrigerated for up to 8 hours.)
