Ingredients

1 1/2 Cups All Purpose Unbleached Flour2 tsp granulated sugar1/4 tsp salt1/4 cup cold shortening or lard1/4 cup cold Longo’s Country Churned Unsalted Butter, cubed1 large Longo’s Enriched Coop Egg (yolk only)1 tsp Longo’s Essentials White VinegarIce water

Directions

Place flour, sugar and salt in food processor; pulse to combine. Add shortening; pulse on and off until fine crumb consistency. Add butter; pulseon and off for about 15 seconds or until butter is pea sized.

Beat egg yolk with vinegar in a 1-cup liquid measuring cup; add enough ice water to come to the 1/3 cup mark. While pulsing machine on and off, pour egg mixture down feed tube; pulse just until dough starts to clump.

Turn out onto work surface. Shape into a ball, then press into a disc. Wrap in plastic wrap. Chill for 30 minutes or until firm. (Make-ahead: Store in refrigerator for up to 2 days or freeze for up to 1 month.)
