Place flour, sugar and salt in food processor; pulse to combine. Add shortening; pulse on and off until fine crumb consistency. Add butter; pulseon and off for about 15 seconds or until butter is pea sized.
Beat egg yolk with vinegar in a 1-cup liquid measuring cup; add enough ice water to come to the 1/3 cup mark. While pulsing machine on and off, pour egg mixture down feed tube; pulse just until dough starts to clump.
Turn out onto work surface. Shape into a ball, then press into a disc. Wrap in plastic wrap. Chill for 30 minutes or until firm. (Make-ahead: Store in refrigerator for up to 2 days or freeze for up to 1 month.)
