FRESH MANGO SALAD

Ingredients

2 fresh ripe but firm mangoes

1 red bell pepper, thinly sliced

1/4 cup diced red onion

1/4 cup chopped fresh Longo’s Organic Cilantro

3 tbsp fresh lime juice or rice vinegar

1 tbsp water

1 tbsp granulated sugar

1 clove garlic, minced

1/4 tsp Longo’s Crushed Chilies

1/4 tsp salt

4 cups Longo’s Organic Half & Half Spring Mix and Baby Spinach

1/3 cup chopped Longo’s Roasted Salted Cashews

Directions

Peel mangoes and cut along the wide flat side along the pit. Repeat on the other side. Thinly slice into long strips and place in large bowl. Add bell pepper, onion and cilantro.

Whisk together lime juice, water, sugar, garlic, chilies and salt in small bowl until sugar dissolves. Pour over mango mixture and toss well to coat.

Spread greens onto platter and top with mango mixture; toss gently to coat. Sprinkle with cashews to serve.

A Dash of Advice

Shrimp Skewer Variation: Grill some Longo’s Shrimp Skewers and place overtop of salad to serve.Chicken Variation: Spoon some chopped Longo’s Rotisserie Style Chicken overtop of salad to serve.
