GRILLED ASPARAGUS WITH CRUNCHY LEMON-PARM TOPPING

2 large bunches fresh Ontario
asparagus, trimmed
1 tbsp Longo’s Extra Virgin Olive Oil
1/2 tsp each salt and pepper
Thin lemon wedges (optional)
Topping:
2 tsp Longo’s Extra Virgin Olive Oil
3 tbsp Longo’s Panko Bread Crumbs
3 tbsp freshly grated Longo’s Curato
Parmigiano Reggiano DOP
2 tsp finely grated lemon zest
Directions
DIRECTIONS
Topping:
Set small grill-proof skillet or foil pan on grate of preheated medium grill. Add oil and bread crumbs. Cook, stirring often, for 4 to 5 minutes or until bread crumbs are dark golden brown.
Remove from heat; cool slightly. Stir in Parmesan and lemon zest; set aside.
Toss asparagus with oil, salt and pepper.
Grill, turning often, for 6 to 8 minutes or until lightly charred and tendercrisp.
Toss asparagus in crumb mixture.
Transfer to platter and sprinkle any residual bread crumbs overtop.
Garnish with lemon, if using.
