GRILLED ASPARAGUS WITH FETA AND PISTACHIOS

Ingredients

1kg fresh Ontario asparagus, trimmed

1/4 cup each finely chopped fresh Longo’s Organic Tarragon, Longo’s Organic Dill and parsley, divided

1/4 cup minced shallots

1 tbsp fresh lemon juice

1/2 tsp each salt and pepper

1/2 cup Longo’s Mediterranean Extra Virgin Olive Oil

1/4 cup chopped shelled Longo’s Dry Roasted Salted California Pistachios

1/3 cup crumbled Longo’s Feta Cheese

Directions

Grill asparagus on preheated greased grill over medium-high heat for about 8 minutes, turning occasionally, until browned but not charred.

Stir together two-thirds each of the tarragon, dill and parsley, all the shallots, lemon juice, salt and pepper in bowl. Whisk in olive oil until combined.

Place asparagus on serving platter. Pour dressing overtop and then scatter remaining herbs over the dressing. Sprinkle with pistachios and feta. Serve warm.

A Dash of Advice

To properly trim asparagus, place 3 to 5 stalks at a time between your thumb and forefinger of each hand. Then bend the stems until they break.The asparagus will automatically break where the woody part ends and the fresh, juicy asparagus begins. You don’t need to worry about snapping off too much or too little. Then line up all the asparagus and trim the ends so they are even, if desired
