GRILLED PORK TENDERLOIN WITH GRILLED PEACH SALSA

Ingredients

1 1/2 tsp each smoked paprika and Longo’s Essentials Ground Cumin

3/4 tsp each Longo’s Essentials Garlic Powder and Dried Oregano

1/2 tsp Longo’s Essentials Ground Cinnamon

1/4 tsp each salt and pepper

2 pork tenderloins (about 1kg total)

Peach Salsa:

4 fresh, ripe but firm Ontario peaches, halved

1/4 cup chopped fresh Longo’s Organic Cilantro

1/4 cup finely chopped red onion 

2 tbsp minced, seeded fresh jalapeño pepper

1 clove garlic, minced

2 tbsp fresh lime juice

Salt and pepper to taste

Directions

Peach Salsa:

Place peach halves on preheated greased grill over medium-high heat. Grill, turning once, for 10 minutes. Let cool.

Mash 2 halves until almost puréed; place in bowl. Chop remaining halves and add to bowl. Stir in cilantro, red onion, jalapeño, garlic and lime juice. Season to taste with salt and pepper; set aside.

Stir together paprika, cumin, garlic powder, oregano, cinnamon, salt and pepper in bowl. Roll tenderloins, one at a time, in spice mixture until well coated.

Place tenderloins on preheated greased grill over medium-high heat. Grill, turning occasionally, for 25 to 30 minutes or until well-browned on all sides and instant read thermometer inserted at thickest end registers 150°F.

Transfer to cutting board; tent with foil and let stand for 10 min. Slice pork and serve with Peach Salsa

Tip: Instead of mashing one of the peaches, use 2 tbsp peach jam instead
