GRILLED SHORT RIBS WITH CITRUS AND GINGER MARINADE

Ingredients
2 tbsp Longo’s Essentials 100% Canola Oil
1 onion, diced
5 cloves garlic, minced
3 tbsp minced fresh ginger
2 jalapeño peppers, deveined, seeded and diced
2 tsp ancho chili powder
1 tsp ground coriander
1/2 tsp each salt and pepper
1 cup beer or white wine
2 tsp finely grated fresh lime zest
1/2 cup freshly squeezed lime juice
1/2 cup chopped fresh cilantro
1 1/2lb Longo’s Certified Angus Beef Sliced Beef Short Ribs
Directions
Heat oil in large skillet set over medium-high heat. Add onion, garlic, ginger and jalapeños. Cook, stirring often, for about 5 minutes or until fragrant and translucent. Stir in chili powder, coriander, salt and pepper. Add beer, lime zest and lime juice; bring to a boil. Boil for 1 minute. Remove from heat and cool. Stir in cilantro.
Arrange ribs in large baking dish. Pour marinade overtop and toss well so that all ribs are coated. Cover and refrigerate for at least 3 hours or for up to 12 hours.
Bring ribs to room temperature. Discard marinade. Grill ribs over high heat, turning once, for about 4 minutes per side or until charred and cooked through.
Non-alcoholic variation: Substitute non-alcoholic beer, apple juice or orange juice for the beer or wine.
