GRILLED SUMMER VEGGIES WITH WHIPPED FETA AND CHILI OIL

Ingredients
2 pkg (350g each) Longo’s Fresh Cut Vegetables for the Grill
1/2 tsp each salt and pepper
Chili Oil:
1/4 cup Longo’s Mediterranean Extra Virgin Olive Oil
1/4 tsp Longo’s Crushed Chilies (or to taste)
1/4 tsp smoked or Longo’s Essentials Paprika
Whipped Feta:
1 tub (200g) Longo’s Feta, drained
3/4 cup thick Greek yogourt
1 clove garlic, grated
2 tbsp chopped fresh Longo’s Organic Dill or Mint (plus extra to serve)
Directions
Chili Oil:
Combine oil, chilies and paprika in small saucepan; heat over low for 2 to 3 minutes or until fragrant. Set aside.
Whipped Feta:
Combine feta, yogourt, garlic and dill in food processor. Process until smooth and creamy; set aside.
Toss vegetables with 2 tbsp Chili Oil, salt and pepper. Grill vegetables on preheated greased grill over medium heat for about 12 minutes or until marked and tender, turning as needed and removing items to a bowl to keep warm once done.
Arrange vegetables on platter; spoon Whipped Feta into bowl and drizzle with remaining Chili Oil to serve alongside. Garnish with additional fresh dill sprigs.
