LEMONY COUSCOUS WITH CARROTS

Ingredients

1 carton (946 mL) Longo’s No Salt Added Chicken Broth |
2 1/3 cups Longo’s Pearl Couscous |
2 cups matchstick carrots |
1/4 cup chopped fresh parsley |
3 tbsp Longo’s Salted Butter |
2 tbsp lemon juice |
1 tbsp finely grated lemon zest |
1/2 tsp salt |
1/4 tsp pepper |
Directions
DIRECTIONS
Bring broth to a boil in large pot. Stir in couscous. Cover and cook on medium for 12 minutes. Reduce temperature to medium-low.
Stir in carrots; simmer, covered, for 6 to 8 minutes or just until fluids are absorbed and carrots are tender. Remove from heat.
Stir in parsley, butter, lemon juice and zest, salt and pepper.
Variation:
Replace matchstick carrots with 2 cups chopped asparagus.
