2 cups cooked Longo’s Quinoa |
1 can (540 mL) Longo’s Chickpeas, drained and rinsed |
1/2 cup chopped fresh parsley |
1/4 cup thinly sliced green onions |
4 tsp Longo’s Hemp Hearts |
4 lemon wedges |
House Dressing: |
1/4 cup each Longo’s Cider Vinegar and water |
2 tsp sea salt |
1 tsp lemon juice |
1 clove garlic, minced |
3/4 tsp each pepper and tamari |
1/2 tsp Longo's Organic Blue Agave Nectar |
1/4 tsp Longo’s Ground Mustard |
3/4 cup sunflower oil |
1/4 cup flax oil |

House Dressing
Combine vinegar, water, salt, lemon juice, garlic, pepper, tamari, agave nectar and mustard in small blender or food chopper. Blend until smooth.
While motor is running, drizzle in sunflower and flax oils in a thin steady stream, until dressing is emulsified and smooth. Cover and refrigerate until ready to use.
Divide quinoa in centre of 4 bowls. Top with chickpeas, parsley and green onions. Sprinkle each with hemp hearts and garnish with lemon wedge. Drizzle about 2 tbsp of House Dressing over each salad to serve. Squeeze lemon over top and stir together to enjoy.
