4 Longo’s Cod Loins or Haddock Portions (340g pkg), thawed
1 can (540mL) Longo’s Essentials Petite Cut Tomatoes, drained
1/2 cup halved Longo’s Stuffed Manzanilla Olives
1 pkg (450g) Longo’s Kitchen Meal Kit Brown and Black Cooked Rice
1 pkg (450g) Longo’s Kitchen Braised Green Beans
Directions
DIRECTIONS
Pat fish dry and place in 13 x 9-inch baking dish. Sprinkle both sides of fish with 1/2 tsp each salt and pepper.
Stir together drained tomatoes and olives; spoon onto fish. Roast in preheated 425°F oven for 15 minutes.
Heat rice and green beans as directed on packages and divide among plates. Top with fish. Drizzle with Longo’s Extra Virgin Olive Oil to serve.
