Ingredients

1 Longo's Prime Rib Premium Oven Roast, cap removed (about 6-8 lb)

tsp ground Longo's Sea Salt

1 tsp pepper

1 tsp Longo's Garlic Powder

Directions

Place roast on rack in roasting pan. Leave out of refrigerator for 2 hours before roasting, allowing meat to come to room temperature. Preheat oven to 500°F before roasting.



Combine salt, pepper and garlic powder; rub all over roast.



Place roast, uncovered, in oven. Roast for 42 to 55 minutes depending on weight (approx. 7 minutes per pound). Turn off oven and allow roast to continue cooking for 2 hours; DO NOT open oven door. Carve roast and serve.



Tip:


If concerned about the internal temperature of the oven, use a probe-style meat thermometer with a cord that allows you to leave it in the meat and monitor the temperature from outside the oven without opening the door. Once the temperature reaches between 140°F and 145°F, it is ready to carve.
