Ingredients
1 lb Longo’s Boneless Skinless Chicken Breasts (about 2 large)
1 tbsp Longo’s BBQ Spice Rub
2 yellow, orange or green bell peppers, thinly sliced
1 pkg small Longo’s Flour Tortillas (8)
1 tub (420mL) Longo’s Fresh Salsa
Directions
Slice chicken breasts into 1/2-inch thick strips and toss with 1 tbsp Longo’s Extra Virgin Olive Oil, spice rub and 1/4 tsp each salt and pepper.
Toss peppers with 1/2 tsp each salt and pepper and 1 tbsp Longo’s Extra Virgin Olive Oil.
Heat large nonstick skillet over medium-high heat and sauté peppers for about 8 minutes or until starting to become golden; return to bowl. Add chicken to pan and sauté for about 10 minutes or until no longer pink inside. Return peppers to skillet and add 1/2 cup of the salsa to heat through.
Divide among tortillas to serve and top with additional salsa, if desired.
