PERSIMMON GINGER SPRITZER

Ingredients

1 ripe Fuyu persimmon, stem removed

Ice

2 tbsp fresh lime juice

1/2 tsp grated fresh ginger

Longo’s Honey

Strip of lime zest<

Longo’s Carbonated Water

Directions

Peel and chop persimmon, place in small food processor and purée until very smooth.


Place ice into rock glass and add persimmon purée, lime juice and ginger. Stir gently to combine.

Add honey, to taste. Add lime zest and then pour enough carbonated water to top off drink.


Tip:

To create a spiked variation, add in 2 tbsp vodka or gin.

A Dash of Advice

A perfectly ripe persimmon should be deeply coloured, glossy and heavier than it looks. Give it a gentle squeeze, and if it gives slightly under pressure, it’s ready to enjoy.
