PIRI PIRI CHICKEN AND CHEESE

Ingredients

4 Longo’s yellow fleshed potatoes, cut in chunks3 tbsp chopped fresh parsley500 g boneless skinless chicken thighs (6 to 8)1 tbsp Longo’s piri piri spice1/2 cup Longo’s brick cream cheese, cubed

Directions

Boil potatoes in a saucepan of salted water for about 15 minutes or until tender. Drain well and return to pot. Roughly mash potatoes with 2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil, parsley, 1/2 tsp salt and 1/4 tsp pepper.

Meanwhile, toss chicken all over with piri piri spice and 1 tbsp Longo’s Mediterranean Extra Virgin Olive Oil.

Heat 1 tbsp Longo’s Mediterranean Extra Virgin Olive Oil in a large non-stick skillet over medium high heat and brown chicken well on both sides. Remove to plate.

Add 1/2 cup of water to skillet with 1/4 tsp each salt and pepper; stir to scrape up brown bits from pan. Stir in cream cheese until melted. Add chicken back to skillet and reduce heat to medium low. Cook, turning and stirring occasionally for about 6 minutes or until chicken reaches 165ºF and juices run clear. Remove from heat.

Serve potatoes with Chicken and sauce.
