SHEET PAN TURKEY GRILLED CHEESE AND GREENS

Ingredients
1 jar (270mL) Longo’s Red Pepper Jelly
8 slices Longo’s Sourdough Bread
1 pkg (200g) Longo’s Imported Mild Cheddar Cheese Slices
300g Longo’s Sliced Oven Roasted Turkey Breast
1 pkg (142g) Longo’s Organic Spring Mix
Directions
Measure out 1/2 cup of the pepper jelly into bowl and stir in 1/4 tsp pepper. Spread onto bread slices.
Divide cheese slices, breaking up if necessary, on top of pepper jelly. Add turkey to 4 of the slices. Close sandwiches.
Stir together 3 tbsp Longo’s Essentials 100% Pure Canola Oil with 2 tbsp of the pepper jelly and brush over each sandwich (top and bottom). Place on baking sheet lined with parchment paper.
Bake in 450°F oven for 6 minutes, then remove from oven.
Using a flat spatula, flip sandwiches carefully and press down slightly. Return to oven for about 5 minutes or until golden brown, cheese is melted, and bread is crisp and golden.
Meanwhile, add 2 tbsp Longo’s Essentials 100% Pure Canola oil to the remaining pepper jelly jar with a pinch each of salt and pepper. Shake well to combine and toss with mixed greens.
Serve the sandwiches with greens on the side.
Tip: Freeze any remaining sourdough bread for future use or make some croutons for the salad. Cut the bread into bite-sized cubes and toss with 2 tbsp Longo’s Essentials 100% Canola Oil and 1/4 tsp each salt and pepper. Spread onto baking sheet and toast in preheated 400°F oven for about 5 minutes or until golden and crisp.
