SOUP DUMPLINGS

Ingredients
1 packet (7g) unflavoured gelatin
3/4 cup Longo’s Essentials Beef Broth
225g ground pork
2 tbsp minced green onion
1 tbsp soy sauce
1 tbsp Longo’s Sesame Oil
1 tsp minced fresh ginger
24 dumpling/perogy wrappers (approx.) (half a 454g pkg)
Directions
STEP 1:
Sprinkle gelatin over 1/4 cup water in small dish and let stand for 2 minutes. Heat beef broth until steaming and pour over gelatin mixture. Whisk until dissolved and pour into a small shallow dish. Refrigerate for about 2 hours or until cold and firm.
STEP 2:
Mix together pork, green onion, soy sauce, sesame oil and ginger in bowl; set aside.
STEP 3:
Finely dice firm broth mixture directly in the shallow dish. Scrape into pork mixture and mix to combine evenly. Return to refrigerator.
STEP 4:
Roll out each dumpling wrapper to about a 4-inch diameter. Spoon about 1 tbsp of the pork mixture into centre of wrapper and moisten the edge of the dumpling with lightly dampened fingers. Start at one end and make little folds all along the dumpling to start closing around the filling while tucking in the filling with the other hand. Place dumplings into parchment-lined bamboo steamer in a single layer (see tip). Repeat with remaining ingredients. (Make-ahead: Freeze prepared dumplings for up to 2 weeks and steam from frozen, adding about 5 minutes of cooking time when steaming.)
STEP 5:
Bring about 2 inches of water to a gentle simmer in large skillet. Place bamboo steamer into skillet; cover and steam for about 5 minutes or until pork is no longer pink and wrappers are shiny. Repeat with another layer of dumplings in steamer.
Tips: If you do not have a bamboo steamer, you can use a heatproof plate or a steamer basket, but make sure they are lined with parchment paper. Folding the dumplings will get easier the more you do.
STEP 6:
Toppings: Place dumplings in shallow bowl. Top with green onions and a squeeze of lime. Sprinkle with sesame seeds and chili crisp and drizzle with your choice of sauces.
These dumplings are also delicious on their own with no toppings necessary!
