STRAWBERRY MUFFINS WITH BALSAMIC GLAZE

Ingredients

2 1/2 cups Longo’s Organic All Purpose Flour

1 tsp baking soda

1/2 tsp each baking powder and salt

1 cup buttermilk or Longo’s Sour Cream, room temperature

1 1/2 cups packed light brown sugar

2/3 cup Longo’s Essentials 100% Pure Vegetable Oil

1 tbsp finely grated orange zest

1/4 cup Longo’s 100% Pure & Natural Orange Juice

1 large Longo’s Enriched Coop Egg, room temperature

2 tsp vanilla

1 1/2 cups chopped fresh strawberries

1/3 cup Longo’s Curato 100% All Natural  Glaze with Balsamic Vinegar of Modena, divided

Directions

Combine flour, baking soda, baking powder and salt in bowl.

Whisk together buttermilk, brown sugar, oil, orange zest, orange juice, egg and vanilla in separate bowl. Pour over flour mixture; use wooden spoon to quickly stir together until a thickish batter is formed. Gently fold in strawberries.

Divide muffin batter among 12 paper-lined muffins cup. Drizzle 3 tbsp of the balsamic glaze overtop, using a toothpick to draw through the batter. Bake in preheated 375°F oven for 20 to 25 minutes or until tops of muffins spring back when lightly pressed.

Let cool slightly. Drizzle remaining balsamic glaze overtop.

Tip: Muffin tin volumes vary. To check the volume, use a liquid measure and pour in water to the top of the tin. If the volume is 1/2 cup, you will get 12 muffins. Less volume will give you more, smaller muffins.
