1 pkg (200g) Longo’s Black Forest Ham Steaks, diced |
1 cup shredded medium white cheddar cheese |
8 Longo’s Large Enriched Coop Eggs |
2 tbsp chopped fresh parsley |
1 pkg (142g) Longo’s Spinach and Spring Mix |
Directions
DIRECTIONS
Combine ham and cheese together in bowl; set aside.
Whisk together eggs, parsley, 2 tbsp of water and 1/2 tsp each salt and pepper.
Heat 2 tbsp Longo’s Extra Virgin Olive Oil in a 12-inch nonstick skillet over medium heat. Pour egg mixture into pan; rotate pan to spread mixture. Cook for about 4 minutes until eggs are almost set, gently lifting edge with spatula to allow uncooked eggs to flow underneath.
Reduce heat to medium-low. Spoon ham and cheese mixture over half the omelette and cover with lid for 3 minutes or until cheese melts. Slide onto platter, folding in half.
Drizzle 3 tbsp Longo’s Extra Virgin Olive Oil, 1/2 tsp salt and a pinch of pepper over spring greens and toss to coat.
Cut omelette into quarters and serve with greens.
