SUN-DRIED TOMATO YOGOURT HERB SPREAD

1 tub (750g) Astro Original Balkan Plain 0% Yogourt

4 sun-dried tomato halves (not in oil)

1/4 cup chopped fresh Longo’s Basil

1 clove garlic, minced

1/2 tsp salt

1/4 tsp pepper

Longo’s Flatbread or toasted baguette slices

Directions

DIRECTIONS

Line colander with a double layer of cheesecloth or a coffee filter and set over a bowl.


Scrape yogourt out of container into lined colander. Cover lightly with plastic wrap and refrigerate to drain yogourt for at least 12 hours or until very thick.


Discard liquid from bowl and scrape yogourt from cheesecloth into a bowl.


Soak tomatoes in hot water for 10 minutes or until softened and pliable. Drain well and chop. Stir into yogourt along with basil, garlic, salt and pepper. Cover and refrigerate for at least 1 hour for flavours to meld. Stir well before serving alongside flatbread.


A Dash of Advice

Spread can be covered and refrigerated for up to 1 week. Stir well before enjoying.
