SWEET POTATO FALAFEL BURGERS

1 box (504g) Longo’s Falafel Burgers |
1lb sweet potatoes, peeled (about 2 small) |
2 large Longo’s Enriched Coop Eggs, lightly beaten |
1/3 cup Longo's Organic All Purpose Flour |
1/2 cup Longo’s Tzatziki Dip |

DIRECTIONS
Place falafel burgers onto baking sheet lined with Longo’s Parchment Paper. Bake in preheated 400°F oven for about 15 minutes or until golden and heated through. Keep warm.
Using the coarse side of a cheese grater, grate sweet potatoes. Combine sweet potatoes, egg, flour, 1 tsp salt and 1/2 tsp pepper in large bowl. Divide mixture into 12 small piles.
Heat 2 tbsp Longo’s 100% Pure Canola Oil in large non-stick skillet over medium heat and place a few of the sweet potato piles into skillet; press down to flatten. Cook for about 5 minutes per side, until golden brown. Remove to plate lined with paper towel and repeat with remaining mixture, adding more oil, 1 tbsp at a time, as necessary.
Top half the potato pancakes with a falafel burger and tzatziki. Sandwich with remaining sweet potato pancakes to enjoy.
