1 can (398mL) Longo’s Organic Cannellini Beans, drained and rinsed
1 small sweet potato (about 175g), peeled
1 tbsp chopped fresh Longo’s Oregano
1 1/2 tsp chopped fresh Longo’s Thyme
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp Longo’s Essentials Ground Cayenne
1 Longo’s Enriched Coop Large Egg
1/4 cup chopped fresh cilantro
3 green onions, finely chopped
1 tbsp lime juice
3/4 cup Longo’s Organic Rolled Oats
Directions
DIRECTIONS
In large bowl, mash beans with a potato masher or fork until almost smooth. Grate sweet potato to get about 1 3/4 cups. Add sweet potato, oregano, thyme, smoked paprika, salt, cayenne, egg, cilantro, green onions, lime juice and oats to beans; stir until very well combined.
Divide mixture into 6 equal-sized portions. Shape into patties. Place on baking sheet lined with Longo’s Parchment Paper.
Bake in centre of preheated 350°F oven for 15 minutes. With a spatula, flip each patty over. Bake for 10 to 15 minutes more or until lightly golden on the other side.
