Ingredients

2 tbsp Longo’s Extra Virgin Olive Oil

1 leftover cooked Longo’s Hot Italian Pork Sausage, diced

2 slices bacon, diced

1/2 cup each diced celery and diced red onion

1/4 cup diced fennel

2 cloves garlic, minced

1 cup diced tomato

1 tsp each salt and pepper

1 can (398mL) Longo’s Organic Cannellini Beans

2 cups Longo’s Essentials Vegetable Broth or sustainable broth (see opposite page)

1 piece Parmesan cheese rind (optional)

2 cups wilted greens (such as Longo’s Baby Kale or Nordic greens)

2 tbsp chopped parsley

2 tbsp grated Parmesan cheese

Directions

DIRECTIONS

Heat oil in saucepan over medium heat and cook sausage and bacon until browned. Stir in celery, onion, fennel and garlic; cook for about 8 minutes or until vegetables are softened. Stir in tomato, salt and pepper; sauté for 5 minutes.

Drain beans, reserving 1/4 cup of the bean liquid (aquafaba) from the can. Rinse beans and add to saucepan with the 1/4 cup of bean liquid, broth and Parmesan rind, if using. Bring to a boil; reduce heat and simmer for 20 minutes. Stir in wilted greens and simmer for 5 minutes. Ladle into bowls and sprinkle with parsley and grated Parmesan to serve.

A Dash of Advice

Sustainable Tip: Use 1 green or a combination of greens that are wilting away for this soup. They will cook perfectly, become tender and add a wonderful colour and flavour.
